Dibbun's Delight

12 oz chopped mixed nuts
2 c sugar
1/4 c light brown sugar
6 T corn syrup
1/4 c unsalted butter
1/4 t baking soda
10 T water

Preheat oven to 225*.  butter a 9x13" baking pan.  Place the nuts on a 
rimmed baking sheet and warm them in the oven until needed.  In a heavy
saucepan over medium heat, combine sugars, syrup and water and cook until
sugars dissolve.  Add butter to the pan and bring to a boil.  Simmer
slowly, without stirring, until liquid reaches 300* (hard crack stage)
on a candy thermometer, about 20-30 minutes.  Quickly stir in the warmed
nuts and baking soda and pour mixture into the greased pan.  Let mixture
cool until begining to set (about 20 minutes) then use a sharp knife to
mark 1 by 2 inch bars.  When completely cool, turn out of pan and break
into bars.  

Something went wrong with this recipe.  It never set, not even after 
two hours in the freezer.  I wound up with mixed nuts suspended in sugar
goop.  The goop is so sweet, it makes your teeth ache. I think I'm going
to have to find a filled cookie recipe and use this as the filling.  I'm
very dis-appointed.  This is my first failure from the Redwall Cookbook.
